Looking for a great light lunch or dinner? It will also use up one of those zucchinis you might have sitting on your kitchen counter. I have been seriously craving Tomato Pie but have yet to get my hands on enough homegrown tomatoes to make one. Many thanks to Julie for giving me a few tomatoes over the weekend. Our Sunday night BLT’s were yummy! This delicious savory pie is another one of those old-fashioned recipes that just screams summer.
- 3 eggs
- 2 cups shredded zucchini
- 1 cup chopped onion
- ¼ cup vegetable oil
- ¾ cup shredded sharp cheddar cheese
- ¾ cup flour
- 1 teaspoon baking powder
- ¾ teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon dried sage
- ¼ teaspoon paprika
- Preheat oven to 350 degrees. Lightly grease a deep dish 9" pie plate. Set aside.
- In a medium bowl, lightly beat the eggs. Add the rest of the ingredients and mix well with a spatula.
- Pour into prepared pie plate. Bake for 45 minutes or until set. Cool for 5-10 minutes before slicing.
