Cranberry Pecan Chicken Salad

Ingredients
  • ½ to ¾ cup mayo
  • ¼ cup sour cream
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon soy sauce
  • ½ teaspoon curry powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 3 cups boneless skinless chicken breast, cooked and shredded
  • ½ cup celery, thinly sliced
  • 4 green onions, sliced
  • ½ cup dried cranberries
  • ½ cup chopped pecans, toasted
Instructions
  1. In a small bowl mix ½ cup mayo, sour cream, lemon juice, soy sauce, curry powder, kosher salt, and pepper.
  2. In a medium bowl, combine the chicken, celery, green onions, dried Cranberries, and toasted pecans.
  3. Gently mix in the mayo mixture.
  4. Add the remaining ¼ cup of mayo if the salad is not as creamy as desired.
