Coconut Cupcakes with Vanilla Frosting

Ingredients
For the cupcakes:
  • ½ cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1 teaspoon vanilla
  • ½ cup coconut flakes
For the frosting:
  • 2 cups sifted powdered sugar
  • ½ cup butter, softened
  • 1 teaspoon vanilla
  • 1-2 tablespoons milk
  • Additional coconut for garnish
Instructions
For the cupcakes:
  1. Preheat the oven to 375 degrees.
  2. Line muffin pans with cupcake liners.
  3. Cream the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time.
  5. In a separate bowl, combine the flour, salt and baking powder.
  6. Gradually add the dry ingredients, alternating with the milk to the butter and sugar mixture.
  7. Stir in the vanilla and the coconut.
  8. Bake for about 16-18 minutes.
For the frosting:
  1. Cream the sugar, butter and vanilla.
  2. Add the milk to desired consistency.
  3. After frosting cupcakes, sprinkle with additional coconut.
