Savory Dilly Muffins and Several Delicious Soups
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 2 teaspoons dried dill weed
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 cup cottage cheese
  • ¾ cup milk
  • 1 egg, lightly beaten
  • ¼ cup butter, melted
  1. Preheat oven to 400 degrees. Grease 12 muffin cups or line with paper baking cups.
  2. In a medium bowl combine the flour, baking powder, sugar, dill weed, onion powder, kosher salt and black pepper. Mix well.
  3. In a lage bowl beat the cottage cheese for a minute. It will still be lumpy. Mix in the milk, egg and melted butter.
  4. Stir the dry ingredients into the wet until just combined. Don't over mix. Using an ice cream scoop evenly divide between the muffin cups.
  5. Bake for 20-22 minutes or until a toothpick inserted in the center come out clean.
